This recipe is for one GIANT S’mores Chocolate Chip Cookie! It’s a single serve cookie recipe that’s as big as your head, packed with chocolate, graham crackers, and gooey marshmallow AND can be made in your oven or air fryer!
Ingredients
- Sugars. This recipe uses both granulated and brown sugar for that classic chocolate chip cookie flavor. I like to use dark brown sugar for a deeper color and chewier cookie, but light brown sugar is fine if that’s what you have!
- Butter & Egg. I recommend using a high quality salted butter like Kerrygold. You’ll also need 1 TBSP of a whole whisked egg – so you’ll whisk the egg and then use 1 TBSP of that in the recipe.
- All Purpose Flour. Just regular ole AP. I have tested this recipe with a gluten free 1 to 1 flour replacement with great results. Just make sure you choose one that contains Xanthan Gum.
- Graham Cracker Crumbs. You can’t have a S’mores cookie without ’em!
- Chocolate. Of course a S’mores cookie needs milk chocolate, but I like to use a mix of milk and semi sweet so that it doesn’t get too sweet!
- Marshmallow. We’ll stuff the center of this cookie with mini marshmallows.
Tools & Equipment
- Air Fryer. I bake all of my “One Big Cookie” recipes in my air fryer. I have the Breville Smart Oven Air Fryer and I love it! Can’t say enough good things about it. We use it every single day in my house for everything from toaster strudels to salmon bowls, and of course cookies! If you don’t have an air fryer, or just don’t feel comfortable baking in one, you can also make this cookie in a regular oven.
- Parchment Paper. I’m a huge fam of these precut parchment sheets from Amazon. No more roll away edges!
- Quarter Sheet Pan. These fit perfectly in my air fryer!
- Jumbo Cookie Scoop. I love this giant cookie scoop, but you can also just shape the dough with your hands!
- Mini Spatulas. These are one of my all time favorite baking tools and are perfect for a single serve cookie recipe!
How to Make One Big S’mores Cookie
Make the Dough.
In a small/medium mixing bowl, melt the butter and allow it to cool slightly. Whisk in the sugar and brown sugar until combined. In a separate small bowl, whisk the egg until it’s very well combined with no stringy egg whites remaining. Measure out 1 TBSP of the whisked egg and add that and the vanilla to the butter/sugar mixture. Whisk for at least 1 minute or until the mixture slightly lightens in color and becomes glossy. *Your mixture will be lighter in color if you use light brown sugar instead of dark.
Add in the flour, crushed graham crackers, baking soda, and salt. Mix until combined with just a few flour streaks remaining. Add in the chocolate and mix to combine. Scoop the dough onto a parchment lined cookie sheet and chill for 10 minutes while you preheat your oven or air fryer. Preheat the oven to 350 or the air fryer to 310. After 10 minutes, remove the dough from the fridge and roll it into a ball in your hands. Use your thumbs to create a well in the center of the dough. Fill it with 10 mini marshmallows and a few chocolate chips. Fold the dough up and around the marshmallows so that they’re tucked in, but still peaking out the top.
Bake the Cookie.
In the air fryer bake the cookie for a total of 12 minutes. Bake for 10, remove the cookie and bang it on the counter 2-3 times to help it flatten and spread, then put it back in the air fryer for the remaining 2 minutes. Take it out and again, bang it on the counter to help it spread. Use a rubber spatula or spoon to scoot any runaway edges back into place. Top with extra chocolate, graham cracker crumbs, and flaky salt. Let the cookie sit on the hot cookie sheet for 10 minutes to firm up enough to handle.
If you’d rather bake in a regular oven, follow the same instructions, but bake for a total of 15 minutes. Bake for 13, remove and bang the pan on the counter, then bake for the remaining 2 minutes. One Big S’mores Chocolate Chip Cookie FAQs
- Can I make this cookie Gluten Free? Yes! I have tested this recipe with a gluten free 1 to 1 flour replacement with great results. I recommend using either Bob’s Redmill or King Arthur Baking gluten free flour.
- Can I multiply this recipe for a full batch? Kind of! You can split the dough in half to make two smaller (but still large!) cookies. Just bake for a total of 10 minutes instead of 12. You can also double the recipe and make 2 XL cookies or 4 large cookies. If you want a full batch of cookies, I’d recommend using this recipe for my Bakery Style S’mores Chocolate Chip Cookies.
- Can I freeze the dough and bake later? Yes! Make as directed and freeze in an air tight container for up to 3 months. When ready to bake, let the cookie thaw in the fridge overnight (or thaw on the counter for at least 30 minutes) then bake as directed.

Notes
For chocolate -I like to use a mix of milk chocolate chips and a chopped semi sweet or dark chocolate bar. My favorite chocolate bars for those melty pools of chocolate are these Lindt chocolate bars.
