Air Fryer Cookies For Two

Small batch air fryer cookies for two! I’m so excited about this one, guys! If you follow me on Instagram, you know I recently got an air fryer. And not just any air fryer. The mother of all air fryers. The Breville Smart Oven. And so far, it’s quickly rising ranks as my favorite appliance. Although it’ll never outrank my coffee maker. This is not an ad – I just love it. This little countertop oven does so many things, and does them well. It toasts, bakes, air fries, and even has a specific setting for cookies. I mean come on!

So as soon as I saw that cookie setting I knew I was about to develop this recipe. Air Fryer Cookies for Two – for when you want a little something sweet, but you don’t want to whip up a whole batch. These babies can be baked in a regular oven, toaster oven, or air fryer. And they’re so so good! Instructions include variations for Classic Chocolate Chip, Nutella Chocolate Chip, Cookie Butter Chocolate Chip, and Chocolate M&M. Let’s do it!

How to Make Air Fryer Cookies for Two

All four recipes start out the same, and then have slight variations depending on what version you choose. Start by melting the butter. Then whisk in the granulated sugar and brown sugar. Then, whisk in the egg. These recipes call for 1 TBSP of whisked whole egg. So whisk an egg in a separate bowl and then add 1 TBSP to the butter/sugar mixture. You can save the rest of the egg for another recipe, or toss it. Whisk in the vanilla extract until combined.

For Classic Chocolate Chip Cookies

After you’ve whisked in the vanilla, whisk in the baking soda. Add in the flour and fold together with a rubber spatula. Chop the chocolate. I like to chop some pretty fine and leave some larger chunks. Save a few pieces of the chocolate back to place on top of the cookie dough before baking. Fold the rest into the cookie dough.

Use a large cookie scoop to portion the dough, or just divide it evenly in half. Roll the cookie dough in between your hands into a smooth ball. Place on a cookie sheet – a quarter sheet pan is great for these! And then top with remaining chocolate chunks. Refrigerate for 30 minutes. You can bake without refrigerating, but the cookies will spread A LOT more. Preheat the oven/toaster oven/air fryer to 325 degrees. If you have the Breville, just preheat on the cookie setting.

Bake for 11 minutes, then allow to cool on the hot cookie sheet for another 3-4 minutes, then transfer to a cooling rack or into your mouth. Ha! For perfectly round cookies, use a cookie cutter slightly larger than your cookies and scoot the cookies into perfect circles as soon as they come out of the oven.

For Chocolate M&M Cookies

Fold the rest of the chocolate and M&Ms into the dough.

M&M Cookie Dough Balls

For Nutella Chocolate Chip Cookies

I like to chop some pretty fine and leave some larger chunks. Save a few pieces of the chocolate to place on top of the cookie dough before baking. Fold the rest of the chocolate into the dough.

For Cookie Butter Chocolate Chip Cookies

After you’ve whisked in the vanilla, whisk in the Cookie Butter until combined. Whisk in the baking soda. Add in the flour and fold together with a rubber spatula. Fold in the chocolate chips.

Place on a cookie sheet – a quarter sheet pan is great for these! And then top with extra chocolate chips. Refrigerate for 30 minutes. Ingredients

For Classic Chocolate Chip Cookies

  • 2 TBSP Salted Butter, Melted
  • 2 TBSP Brown Sugar
  • 1 TBSP Granulated Sugar
  • 1 TBSP Whisked Whole Egg
  • 1/4 tsp Vanilla
  • 1/4 tsp Baking Soda
  • 6 TBSP All Purpose Flour
  • 2 TBSP Chocolate Chunks

For Chocolate M&M Cookies

  • 2 TBSP Salted Butter, Melted
  • 2 TBSP Brown Sugar
  • 1 TBSP Granulated Sugar
  • 1 TBSP Whisked Whole Egg
  • 1/4 tsp Vanilla
  • 1/4 tsp Baking Soda
  • 6 TBSP All Purpose Flour
  • 2 TBSP Chocolate Chunks
  • 2 TBSP M&Ms

For the Nutella Chocolate Chip Cookies

  • 2 TBSP Salted Butter, Melted
  • 2 TBSP Brown Sugar
  • 1 TBSP Granulated Sugar
  • 1 TBSP Whisked Whole Egg
  • 1/4 tsp Vanilla
  • 1 TBSP Nutella
  • 1/4 tsp Baking Soda
  • 6 TBSP All Purpose Flour
  • 2 TBSP Chocolate Chunks

For Cookie Butter Chocolate Chip Cookies

  • 2 TBSP Salted Butter, Melted
  • 2 TBSP Brown Sugar
  • 1 TBSP Granulated Sugar
  • 1 TBSP Whisked Whole Egg
  • 1/4 tsp Vanilla
  • 1 TBSP Cookie Butter
  • 1/4 tsp Baking Soda
  • 6 TBSP All Purpose Flour
  • 2 TBSP Chocolate Chunks
  • In a medium bowl, whisk the melted butter with the brown sugar and granulated sugar until combined. 


Instructions

  • In a separate bowl, whisk a whole egg, then add 1 TBSP of the whisked egg to the butter/sugar mixture. Whisk until combined. 
  • Whisk in the Vanilla
  • *For the Nutella or Cookie Butter variations, whisk in the nutella or cookie butter now.
  • Add the baking soda and whisk until combined.
  • Fold in the all purpose flour.
  • Fold in the chocolate chunks or chips
  • *For the M&M variation add in the M&Ms now.
  • Divide the cookie dough in half or use a large cookie scoop to portion the dough into two cookie dough balls. Roll in your hands into a nice smooth ball. 
  • Top with extra chocolate (and M&Ms for the M&M version.)
  • Refrigerate for 30 minutes.
  • Preheat the oven/toaster oven/air fryer to 325.
  • Bake for 11 minutes, then allow to cool on the hot cookie sheet for another 3-4 minutes before transferring to a cooling rack.

Notes

  • Cookie dough can be made ahead and kept in fridge for up to 48 hours, or frozen for up to 3 months.
